Avocado Choc Chip Cookies

Here is a very special new recipe for you guys to try out and I highly recommend giving it go because these cookies are amazing! When making these I had a few issues especially with the recipe being in cups because I forgot that cups to grams conversion is dependent on the substance (why you gotta be like that America?). Also, these cookies don’t melt out like regular cookies so when I say flatten, make them as flat as you want your cookies to turn out. On a positive: these are VEGAN and I have included the macros below!

Ingredients

1 1/4 cups of all purpose flour

1 teaspoon of baking powder

2/3 cup of cocoa powder

1/4 cup coconut oil

1/4 cup of mashed avocado

1/4 cup of granulated sugar

1/2 cup of brown sugar

1 teaspoon of vanilla extract

1/3 cup of almond milk

1/2 cup of vegan chocolate chips (I used Sainsbury’s free from chocolate buttons)

 

Method

  1. Line a baking tray with grease proof paper and pre-heat the oven to 180’c
  2. Mix together the flour, baking powder and cocoa powder in a bowl
  3. In a separate bowl beat together the coconut oil, avocado, granulated sugar and brown sugar until creamy and then add the vanilla extract
  4. Fold in half of the flour mix, add the almond milk and then fold the remaining flour mix followed by the chocolate chips
  5. Roll the cookie dough into tablespoon balls and flatten them out on the baking tray about two inches apart
  6. Bake in the oven for 10 minutes, once finished leave to cool and move to a cooling rack
