Here is a very special new recipe for you guys to try out and I highly recommend giving it go because these cookies are amazing! When making these I had a few issues especially with the recipe being in cups because I forgot that cups to grams conversion is dependent on the substance (why you gotta be like that America?). Also, these cookies don’t melt out like regular cookies so when I say flatten, make them as flat as you want your cookies to turn out. On a positive: these are VEGAN and I have included the macros below!
Ingredients
1 1/4 cups of all purpose flour
1 teaspoon of baking powder
2/3 cup of cocoa powder
1/4 cup coconut oil
1/4 cup of mashed avocado
1/4 cup of granulated sugar
1/2 cup of brown sugar
1 teaspoon of vanilla extract
1/3 cup of almond milk
1/2 cup of vegan chocolate chips (I used Sainsbury’s free from chocolate buttons)
Method
- Line a baking tray with grease proof paper and pre-heat the oven to 180’c
- Mix together the flour, baking powder and cocoa powder in a bowl
- In a separate bowl beat together the coconut oil, avocado, granulated sugar and brown sugar until creamy and then add the vanilla extract
- Fold in half of the flour mix, add the almond milk and then fold the remaining flour mix followed by the chocolate chips
- Roll the cookie dough into tablespoon balls and flatten them out on the baking tray about two inches apart
- Bake in the oven for 10 minutes, once finished leave to cool and move to a cooling rack
